Growing up, this old stand by was almost the only way we ate squash, so it was known simply as “squash.” The method of preparation was understood. Since this is the internet, and I make squash in other ways now, I am giving it a slightly more descriptive title.

1 butternut or 2 acorn squash(es)
a pat or two of butter
maple syrup
salt and pepper

Peel, cut in half and seed your squash. Cut it into chunks about 1- 1 1/2 in square and put these in a pot.  Fill the pot with water until it just covers the squash cubes. Boil until the cubes are soft, but not mushy.* Mash them in a bowl and combine with butter, maple syrup, salt and pepper to taste. Serve hot. (But also pretty good at room temperature. )

*Alternately, you can steam the cubes until they are soft.
